allo mate.
we were there over christmas & new year. had a bike for three weeks.
the weather varied to 80-90 degrees to on the last day when it snowed. the first snow in about 30 years apparently
if you're hiring a bike from eagle rider you have to wear a lid as part of the insurance cover. which is very uncomfortable in the extreme heat
been told in the hieght of summer no matter how fast you go it's still too hot.

watch out for the bends in the road, there must be one about at least every 50 miles or so

the bikers out there are unbelievably friendly

If you like long, green, flat, tunnels, FL is great. I used to live there. The weather is predicable
if you predict rain. The law is friendly if you predict they are some of the baddest dope interdiction
enforcers around. You can't carry much weight on a motorcycle, but more than a lot of states, they are
watching even those. People are friendly, if you have money. Big tourist state. Just stay on
the beaten track however. It's quite red-neck in the interior of the interior. I can't
reccomend any un-paved roads in FL...even in a car.

Best weather, by far, is spring, before the summer tropical systems get going.

Native Floridian here. Best time is in the spring, be sure to start and end if you can at St. Augustine. A charming city, lots of sights, places to eat and drink. See the fort at St. Augustine, great shops, boats in the harbor. Visit Daytona Beach on the way down. Take your time and see as much as you can. By spring, most of the "snow birds" have gone and prices are more reasonable. Hurricane season starts in June and is highest in September, so you should get some pretty good weather around April or May, not really hot yet, but warm enough to enjoy yourself. You can also ride the Gulf side of the state, have done both, prefer the Atlantic side myself. If you have time, dangle a line in the water, fishing is great and just beginning as the ocean temperature starts to heat up. Take a camera and try to get some of your travels on film. Also, ask your significant other what she would like to see and do. Promise you, you BOTH will have a much nicer trip. Life is not a destination, it is a trip, and you should enjoy the heck out of your trip to Florida. Ride safe.

Well in the weather above there is also COLD, detween mid December and end of February you will also find a lot of cold mornings, not cold enough not to ride but it will feel pretty cold at 60-80mph. I am from Scotland but lived in Orlando the past 5 years and the last 2 years have seen some cool winters with frosty mornings. After the frost burns off the days are bright and clear and absolutely beautiful.
As mentioned in the Atlantic coast fron St Augustine heading south is excellent, not much fun in the way of twisties (if you like those) but scenic and relaxing ride, ride through Flagler Beach, Ormond Beach and stop off in Daytona and check out all the bike shops - Big Dog, Harley and of course look at the Trumpets in the BMW Daytona store. Just look at the map and keep heading south down Highway 1, keep going until you hit the Keys. You will have a great time I'm sure.

Thanks for all the reply's guys, flights and bike now booked for last few days of April, first two weeks in May. Had to hire a Harley cos thats the only tourer I can find in Orlando with a back rest and panniers. Hope to make Key West by the 29th, have a couple of nights there then follow the west coast to New Orleans. Any body like to meet up for a beer ?
